Chicken and Dumplings

Ingredients
- Instant Pot
- 1 Tbsp oil
- 1/2 onion, chopped
- 2 stalks celery, chopped
- 3 carrots, chopped
- 3 cloves garlic, minced
- 1 lb chicken breasts, diced
- 4 cups chicken broth
- 1/2 tsp black pepper
- 2 tsp poultry seasoning
- 2 tsp Italian seasoning
- Salt to taste
- 5 biscuits, cut into 8 pieces
- 1 cup frozen peas
- 1/2 cup heavy cream
- 2 Tbsp cornstarch
- 1/4 cup cold water
Instructions
- Press SAUTE and heat oil. Add onions 4–5 min.
- Add celery, carrots, garlic; cook 2–3 min.
- Add chicken, cook 5 min.
- Add broth, seasonings, salt.
- Drop in biscuit pieces.
- HIGH pressure 7 min, natural release 10 min, vent.
- Stir in peas and cream.
- Thicken with cornstarch if desired.
