Chicken and Dumplings

Ingredients

  • Instant Pot
  • 1 Tbsp oil
  • 1/2 onion, chopped
  • 2 stalks celery, chopped
  • 3 carrots, chopped
  • 3 cloves garlic, minced
  • 1 lb chicken breasts, diced
  • 4 cups chicken broth
  • 1/2 tsp black pepper
  • 2 tsp poultry seasoning
  • 2 tsp Italian seasoning
  • Salt to taste
  • 5 biscuits, cut into 8 pieces
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 2 Tbsp cornstarch
  • 1/4 cup cold water

Instructions

  1. Press SAUTE and heat oil. Add onions 4–5 min.
  2. Add celery, carrots, garlic; cook 2–3 min.
  3. Add chicken, cook 5 min.
  4. Add broth, seasonings, salt.
  5. Drop in biscuit pieces.
  6. HIGH pressure 7 min, natural release 10 min, vent.
  7. Stir in peas and cream.
  8. Thicken with cornstarch if desired.
