Burrito Bowls

Ingredients
- Instant Pot
- 1 1/2 Tbsp vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 Tbsp chili powder
- 1 1/2 tsp cumin
- 1 cup chicken broth
- 1 1/2 lbs chicken thighs, diced
- Salt & pepper
- 1 can black beans
- 1 cup corn
- 1 jar salsa
- 1 cup white rice
- Cilantro & cheese for topping
Instructions
- Sauté onion & garlic in oil 4 min.
- Add chili powder & cumin. Add 1/4 cup broth, simmer 1 min.
- Add chicken, beans, corn, salsa. Stir.
- Sprinkle rice on top, pour remaining broth over rice.
- HIGH pressure 10 min, quick release.
- Stir together, top with cheese & cilantro.
