Burrito Bowls

Ingredients

  • Instant Pot
  • 1 1/2 Tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 Tbsp chili powder
  • 1 1/2 tsp cumin
  • 1 cup chicken broth
  • 1 1/2 lbs chicken thighs, diced
  • Salt & pepper
  • 1 can black beans
  • 1 cup corn
  • 1 jar salsa
  • 1 cup white rice
  • Cilantro & cheese for topping

Instructions

  1. Sauté onion & garlic in oil 4 min.
  2. Add chili powder & cumin. Add 1/4 cup broth, simmer 1 min.
  3. Add chicken, beans, corn, salsa. Stir.
  4. Sprinkle rice on top, pour remaining broth over rice.
  5. HIGH pressure 10 min, quick release.
  6. Stir together, top with cheese & cilantro.
